In winter our favorite breakfast meal is quite simple: oatmeal. We love the simpleness to it. How quickly it's made and how it's good either warm first thing morning or eaten cold later in the day as a nutritional snack.
Oats are a reliable source of iron and berries packed with vitamin C, which assist the body in absorbing iron. Vitamin C also an anti-oxidant helps fighting off free radicals. Seeing that it's not the season for fresh berries, we went with frozen organic ones. We are a true believer in organic food. It started intuitively in my first pregnancy, that my partner would strictly only buy organic food, as he wanted me to have the best for me and my growing belly.
2 cups oats
2 cups frozen organic berries
2 cups spring water
optional: maple syrup or sweetener of choice
With the toppings you can be creative, i.e. walnuts, hemp seeds, dried coconut chips, etc.
At medium heat warm up the oats and water in a small sauce pan. Once it starts to boil a bit, add the berries and start to stir until it turns into a purple-ish color. Garnish with desired toppings.
Couldn't get any simpler than that, right?
