
Buckwheat Pancakes

Gluten-free pancakes to start your day


Ingredients for 3 persons:
2 cups buckwheat flour (gluten-free)
1 tsp sea salt
2 tsp coconut blossom sugar
3 cups filtered / spring water
1 organic egg or egg substitute
Few spoons of coconut oil for the pan
Toppings:
Apple sauce
Fruit of your choice
Brown rice syrup (or maple syrup)
Mix all the ingredients for the pancakes in a large bowl. Add 1 tsp coconut oil in a hot cooking pan and fry each side until golden brown. Serve while hot.
Feel free to play around with some of the ingredients for whatever you have laying around the house. I know I always do! Cooking should be fun and flexible. It doesn't have to be or look perfect, as long as it's homemade.
We put emphasis on the water we drink therefore spring water.
As for the toppings, be creative!
