Seasonal Pumpkin Soup

It's pumpkin season! Meaning that you should build up your immune system with seasonal food such as pumpkin. Nature has got your back.

Pumpkin is a superfood packed with:

  • Vitamin A

  • Vitamin C

  • Magnesium

  • Potassium

  • Zinc

  • Fiber

  • And even protein!

I added ginger for some extra spice and as an additional immune system booster. Turmeric, a natural antibiotic, is great for hair and skin.

Ingredients for 4 portions:

1 onion, chopped 1 garlic, pressed 1 thumb sized piece of ginger, chopped 1 tbsp turmeric 1 tbsp curry 1 tbsp salt 1 can of coconut milk 1 pumpkin, chopped

Chop the onion and ginger as well as press garlic. Place all in a pot and cook at medium heat. Sautee with tumeric, curry and salt. Add the pumpkin and coconut milk. Let it cook until the pumpkin gets soft. Than blend it until smooth. Add some extra hot boiled water if too creamy. Salt to your liking. Garnish with seeds.
